Developed and organised for Dublin City Council Climate Action Department and Creative Ireland. The aim of Eat the Streets is to focus on maximising the use of our food and learning and sharing new skills – from growing, cooking, creating and discovering. Bringing together schools, farmers, urban growers and neighbourhoods to celebrate Dublin’s food in all its glory.
Green-Schools - Food and Biodiversity Theme
Content creation and logistical solutions for a new Green-Schools theme - Food and Biodiversity. The theme consists of two main strands of work. The first strand focuses on local actions, including growing and eating food that is produced on the school grounds. The second strand of the theme focuses on global impacts. Students learn how their local actions can positively impact the global environment, by interrupting the current global food production system. It is a nationwide two year programme.
Food in Schools - A Day of Action
A whole school approach to food is critical in equipping children to make healthy, sustainable food choices throughout their lives.
In early 2019 a creative workshop was held which brought together people and organisations who see a real need to improve the lives and health of children and want to see sustained, ongoing food education in schools in Ireland. This facilitated workshop engaged participants in individual and group exercises and focused the group on what they wanted to achieve, enabled them to explore and understand what’s possible, and identified the next steps for action.
The priority action which emerged was the need to establish a whole-of-society initiative, led by government. This would comprise a cross department advisory group and a multi- sector stakeholder forum with the ultimate goal of improving food education, environments, and services in schools.
The Day of Action was organised as part of research for my PhD on Food Literacy

The Cake Café |
Michelle founded the Cake Café in a leafy courtyard in Dublin's city centre. People enjoyed sugar-dusted sponges, lemon slices, the most excellent coffee, glasses of processco, baked egg & soldiers or the famous beans on toast.
There was no microwave or freezer in the kitchen, everything was prepared fresh to order using the very best Irish produce. When Michelle owned the café everything was done to support the excellent small food producers in Ireland, and the was business conducted in an environmentally friendly manner; even using rain water to flush the toilets. |
SliceSLICE is a sister of The Cake Café based in Stoneybatter, which Michelle also founded. It served up tasty lunches, dinner, craft beers, wine and of course lots of cake. All of our ingredients were sourced from small suppliers. Chefs cooked up a simple, well constructed menu with the best Irish ingredients.
During the week a concise breakfast menu of raw muesli, baked eggs, homemade beans and bacon as well as cold press juices and 3fE coffee was served. Lunches, which were available to eat in or take out consisted of chargrilled meat filled sandwiches and seasonal vegetable plates. |
The Bake Book |
With a love of great food and great design, The Cake Café Bake Book combines the two in a beautiful publication about baking. It is filled with deliciously vibrant illustrations, is tactile and informative about preparing food. The book is widely distributed throughout Europe, Australia and the USA by Thames and Hudson.
